Simon Dolinky
Simon Dolinky brings a wealth of experience and a passion for genuine hospitality to his role. Growing up in Wisconsin, he was a frequent visitor to the Dane County Farmers’ Market in Madison, recognized as the largest producers-only market in the United States. This early exposure shaped Simon’s appreciation for seasonal, high-quality ingredients and inspired his honest, authentic approach to restaurants, bars, and events.
His hospitality journey has taken him through renowned restaurants recognized by the James Beard Foundation and the Michelin Guide, where he honed his skills in vibrant culinary scenes across Milwaukee, New Orleans, Madrid, Washington D.C., and Southern California. Simon has created dozens of new concepts and overseen every component, from budgets to food and drink menus to kitchen design. He has also led hotel openings across Canada, the U.S., Mexico, and the Caribbean.
In his free time, Simon loves to travel, hike, explore new cuisines, scuba dive, surf, fish—really, anything near a beach—and he’s recently started spending more time on the golf course.
